Position Title: Culinary Arts Instructor/Extension Nutrition Educator Department: Land Grant Reports Directly To:  Land Grant Director Status:  12 Month - Exempt Salary:  Per Salary Scale   Summary of Duties: Develop and enhance interdisciplinary collaboration within Land Grant Department including culinary arts, nutrition, sustainable agriculture and food systems. During the nine-month academic year, two thirds of time will be focused on the culinary program, 1/3 on extension nutrition. During the three months of summer, 100% of time will be spent focused on extension nutrition. The ideal candidate will have the creativity and self-direction to integrate these different responsibilities to achieve synergistic benefits for students and the community. Provide instruction to students through various delivery methods, including classroom/laboratory instruction, and learning community activities. Teach a maximum of twenty-one (21) credits per academic year (fall/spring), such as Fundamentals of Nutrition, Menu Planning, Managing Foodservice Operations, Quantity Foods and Foodservice Internships. Utilize culturally responsive teaching strategies that facilitate student learning and student success. Prepare clear and measurable objectives, course syllabi, course materials and learning experiences for each course. Design, develop, assess, and oversee program curricula. Implement assessment measures that achieve course, program, and institution learning outcomes, and using the results to strengthen the curricula. Monitor and report student attendance and academic progress in the Jenzabar system on a weekly basis throughout each semester. Provide academic advising and mentoring students. Promote student recruitment, retention, and successful completion of programs. Maintain ongoing communications with community organizations, instructors from other tribal colleges and universities, and public agencies in support of student learning. Participate in college leadership, governance, meetings, committees and operational activities. Work collaboratively with colleagues, staff, and community members. Develop and deliver wellness community outreach, with a particular focus on food, from production to consumption. Work with Extension and community partners on integrated food and nutrition programs toward increased food sovereignty, family, and community self-sufficiency. Deliver and evaluate programs with adults and youth. Perform other duties as assigned.   Supervisory Responsibilities: None. Leadership and ability to direct volunteers, interns and students is necessary.   Working Conditions: General office and kitchen laboratory conditions and outdoor garden work. Normal working hours are from 8:00 AM to 5:00 PM with one hour for lunch break. May need to work additional hours for class preparation, meeting, presentations or travel as needed. Academic hours are not flexible, extension hours are flexible.  UTTC academic staff must be sensitive to the cultures of the students enrolled at the college, must be willing to learn about those cultures, and must be willing to integrate multi-cultural perspectives where appropriate.   Physical Demands: Regularly be able to remain in a stationary position Frequently move about inside an office, classroom, and kitchen lab Operate a computer and other office/classroom equipment Occasionally move, transport, or position up to 50 pounds Communicate clearly and effectively May need to ascend/descend stairs   Minimum Qualifications: Bachelor degree in Family and Consumer Science, Nutrition, Dietetics or related study from an accredited university. Master’s Degree in related field preferred. One year of foodservice experience.   Knowledge and Skills: Knowledge of American Indians, cultures, and histories. Ability to earn a teaching certificate from the N.D. Department of Career and Technical Education. Ability to earn ServSafe® certification within 6 months of employment. Experience/training in gardening Ability to establish and maintain cooperative and effective working relationships with others.
